  • As a chef, I was able to work any station (Fryers, Grill, Sauté, Plating, Salads, Coordinator, and Sunday Brunch) on night and morning shifts. I was trained as a Back of House Shift Lead to Open the restaurant by myself in the morning. This involved setting up all the equipment, making a prep list for the food that needed to be prepped for the day and then doing it, creating labels for all food items, counting inventory, unloading the food trucks and putting everything away in their proper place, doing Line Checks to test the temperatures and assure quality of food, stocking all the food on the kitchen line, training new crew members, cleaning equipment, and washing dishes. I also work night shifts where I'm responsible for working the restaurant's busier shifts, turning all the equipment off after we close, cleaning the floors, taking food products back to the coolers, taking out the trash, and locking up at the end of the night. I watch the entire kitchen during the hours from 2-5 usually. Cooking is an incredibly fast-paced job, but I thrive under the pressure. Communication is key to a good shift, whether it's letting everyone know we're out of a food item and 86 it for the day, letting a server know if there is a delay on their food, helping others and looking out for them when they get busy, and for getting food out in under 12 minutes. You also have to be able to adapt to any situation whenever a crew member doesn't show up or calls in sick. I was also a server and bartender for a very brief time while I had a wrist injury, and that helped me get over any fears of walking up to strangers and talking to them. Over time, I finally got to where it felt natural, so I think this would help me immensely as far as talking to new people goes.

  • I was in charge of the entire restaurants operations as an Assistant Manager. I'd work the shifts with a crew of about 7-8 people. I ran entire shifts by myself usually. I did customer service and table touching to engage with the people that ate there. I counted down the cash registers at the end of the night, and was responsible for figuring out if a voided check was missing or money was short. I also did lots of paperwork. I would check each team member's station to make sure it was clean before they left. I became a certified manager by taking a test in Johnson City. I was the first to pass the test, and helped the other managers to pass as well by tutoring them. As for the job itself, I was mostly a cook, but I also did Front of House things like cleaning the dining room, watching the cash register in the store, or operating the drive-thru. Washing dishes was never beneath me to roll my sleeves up and go do, either. I did my best to be wherever I was needed the most and keep the customers happy. I tried to keep everyone upbeat and have clear communication with all the young employees. I also had to constantly adapt to people calling in sick and picking up slack wherever I had to.
